So I've been working on pizza crust lately and I'm making progress. My girlfriend bought a cast iron pizza stone which helps a ton but I have not decided if it's as good as my old terra cotta one.
Usually I'll make one traditional tomato sauce, pancetta/sausage, mozzarella type and one with nontraditional ingredients but really the key is getting the crust perfect. Last night I seared a pork tenderloin coated in olive oil and cracked pepper; sliced it then laid the slices interspersed with potato slices over apricot jam and carmelized onions; topped it with smoked mozzarella, dabs of goat cheese and fig slices. Maybe that seems too busy but it really wasn't. I might have chosen something less sweet than apricot jam though to balance the carmelized onions and tenderloin.
Tomorrow it'll be a DiGregorio's salsiccia with tomato sauce and basil.

Mrs. Freed makes this ass-kicking Sea Bass with mixed fresh greens/veggies and brown rice ensemble.
Sea bass cost the bucks, and will make most anyone look like a gourmet.
The other night she made excellent simple appetizer, some olive oil/garlic bruschetta with baby arugula, tomato chunks topped by fresh mozzeralla with slight drizzle of evvo and cracked pepper. Scarfed those puppies down.

I made an amazing Chilean sea bass with a chimichurri sauce the other night. It was my first attempt at chimichurri sauce. It was awesome, awesome, awesome.
