Someone recently shared their simple mustard recipe with me.
Mince a small shallot. Toss it in a bowl. Pour in some mustard seeds--2-3 tablespoons is what I did. Pour in enough pickle juice from a jar of pickles to cover. Let it sit out on your counter for 24 hours to ferment a bit. Another day if you want it more ferment-y. After it's fermented, pour it in a blender and let 'er rip for a couple minutes on high. Put in a tiny pinch of salt while it blends. Scrape it into a container and store in the fridge.
It's kinda spicy, has a nice sharp mustard flavor. I'm gonna be going back to the well on this one a lot.

I went to a Texas style barbecue place and had some brisket the other day...they had several sauces to choose from and one was labelled mustard. It was like manna from Heaven.
