If you think about it, the taco really is the most perfect food. It is a pocket of corn (or, if you’re a heathen, flour)...

Corn.

I made an enchilada casserole/mexican lasagna deal the other day that was pretty dope. Wouldnt have worked with flour tortillas. Plus, if my customers tonight are to be believed, gluten is some sort of toxic satanic poison to be avoided at all costs even if you are perfectly tolerant.
