What do you get a person who wants nothing? My gf is a minimalist and other than clothes, two pieces of jewelry, a yoga mat, and bicycle she could care less about worldly possessions. This makes birthdays pretty tough. I try to get things like weekends away to a BnB where we can go hiking or whatever but I wonder how many times I can go back to that well?

The best gift I can ever give is the pleasure of my company.

In seriousness though; she would probably just appreciate thoughtfulness; like making a special dinner or something along that order.
