Smoked pork in chili is really good, so long as you don't smoke it in a crockpot. Congrats.

PS. I tried to smoke ground beef and put it in chili once and it was rather, eh, wood flavored iirc.

I host Thanksgiving every year now and smoke a couple birds. Spatchcock them, rub in salt/black pepper on a 1/2 ratio, put them in the fridge uncovered for three days to cure, smoke away on Turkey Day and they're done in 4-5 hours, pretty easy. Very smoky.

Next day, get a chili going. No beans, just tomatoes, carrot, celery, onion, tomato paste, garlic, spices. In goes the leftover smoked turkey, chopped into bit-size pieces. Let it simmer in a dutch oven for a few hours. Magic. But even better? That chili, left over, two days after Thanksgiving. It's like a campfire in the bowl.

I usually use leftover smoked brisket (in a real smoker) for a beef vegetable soup or chili. Leftovers from a rib roast make a good beef vegetable soup as well. I'll have to try smoked pork and smoked turkey for chili.

I've never added smoked brisket to a veg soup, I'll have to give that a try. Thanks Fat.

What is this “leftover” smoked brisket of which you speak? I am unfamiliar with that phrase.

When I do a brisket, I try to get on that is at least 15 lbs with the flat and the tip.
