Everyone at some point in life should take a couple weeks and travel through Portugal and Spain. At the very least spend either a week in Lisbon or a week in Barcelona/San Sebastian. It's a really incredible part of the world.

Also remarkably freaking awesome: Peru. Fly in to Lima. Spend a few days. Drive south. Go see the geoglyphs of Nazca. Drink pisco. Drive back to Lima on a different route. You will see everything: desserts, mountains, the ocean, a rain forest. It offers every possible bit of biodiversity you could ask for.
