I tried it both ways and don't have pictures of ones that weren't seared in fat, but here are a few pictures of how the fat came to be. The first picture is right at the beginning when everything first went in the pot after smoking the meat for a little bit, the second is at the end and the fat at the top is so deep you can't even see the broth, and the third pic is my first attempt at skimming the fat. I re-skimmed this and ended up with about 16 oz of it. There was a concern fat would be lost in the smoker....and while that may have happened, there was plenty leftover for the broth.

Regardless, not using the fat to sear the tortillas makes a huge difference. And, the ones with fat for searing are so dang rich it really only took one taco to become incredibly sleepy/worthless...so there's that.

smoked some Park steaks , as we call em here. finishing them of on the grill for some crisp. 2 bucks a pound. hard to beat. ( ok, ok, + the x amount I spent on charcoal and wood chips, and beer)

Made some ribs yesterday, 2.5 hours on the smoker, then used the indoor smoker (aka the oven) for 2 hours wrapped in foil because the grill got too hot. Finished them up for about 15 minutes over the fire.

If I'm being honest, I've gotten bored cooking ribs/butts/etc. But, the family still wants me to do it every now and then.

I smoked 2 slabs of baby backs and 2 whole chickens on Friday.

Took a day off Saturday.

Smoked 2 - 8lb brisket flats for a party on Sunday and about 30 beer brats.

Kind of like that Twilight Zone episode with the proverbial "be careful what you wish for" AW- I want to be a BBQ King! Then whamo, AW gets his wish and rides out his existence Bbqing for people every [expletive] weekend.

I went with the "Freed XL" crockpot.

And whenever I talk about smoking meats, what I mean is that I put it in the crockpot with bottles of liquid smoke.

A novice will need some help. My wife and I bought a Ninja combo grill/smoker/air fryer, though it will mostly be used as a smoker for us. It's electric, which is fine since that's easier for a beginner.

Good bump on this thread. We just put some sliced deer roast into some marinade and hopefully by tomorrow night it's headed to the smoker so that we have some delicious deer jerky soon.

My first pork shoulder turned out as good as I could have hoped for. There are a few things I would try out differently next time, but there was nothing that was technically lacking.

That Ninja is super easy to use, the only downside I found was having to refill the smoke box a pretty decent number of times.

That ninja grill looks really useful. Glad your butt turned out well.
