Low and slow allows the eggs to set. Once they are set they just fold over without falling apart. I watched this guys video and it works for me.jim wrote:How do you fold them [expletive] without them falling apart?

i think jim should try making his omelettes on the George Foreman grill when he finally gives up on the griddle aka that flat pan.

Re: rant: fine dining
I used the heavy cast iron skillet to make my wife's and it worked great. The flat tray thing I can't get it. The guy at the resort we stayed at was using a flat tray thing so I know it can be done. Problem is the heavy skillet only has room for one at a time.
But the scrambled egg thing is a good question - why don't I just scramble them and throw stuff in them? Same damn thing really. I'm thinking of going that route next time. This is kind of a hassle.

Mine surprisingly never has fruit anywhere near it.

I feel like a broken record here, but how many omelettes can you make simultaneously with a 8-9 pan?

You can use multiple pans Jim.

That's multiple dishes to clean. I'd rather have an omelette fall apart that have to clean an extra dish. I watched with my own eyes a guy make omelettes perfectly on a flat hot thing.
I simply do not accept this 8-9" omelette pan solution.

Alinea ranked as the best restaurant in Illinois. I have no idea who's doing the rankings.33anda3rd wrote:Ghost, I'm with you. I never photograph food I get at a restaurant. I think it's the new form of hipster elitism. I think I've said this on this board before. 20 years ago it was "I got this available-on-the-Japanese-tour-only 12-inch of Radiohead remixes." Now, the internet has flattened that. Everyone has heard that collection of Radiohead remixes. Everyone has heard the new Rae Sremmurd song the day it hits the web and has an instant opinion. So now, it's food. It's "here's a pic of my $400 meal at Alinea." It cracks me up to no end when someone takes a pic of a cocktail. A cocktail! Brown, with some orange peel as garnish, in a glass. There couldn't be anything less interesting to share, visually. But people think it's important to put it out there with a tag on it saying "Hey, I was at this place tonight!"
This is the picture they give - looks like soup:
For Missouri it was Annie Gunns in Chesterfield.
