Lady at the bakery told me it was invented to use red food coloring.

Pretty sure it was a cake option at my wedding. We had several regular cakes instead of 1 big one.

I made a red velvet cake for Mrs. Wart's birthday about 7 years ago, nobody in her family had ever had it. About a year later, it was everywhere. My mom used to make red cake for our birthday's every year. I always had her use blue food color for mine, so I had a blue velvet cake.

We did a 50/50 wedding cake for my reception. My half of the cake was Cardinals themed with red velvet cake. Hers was froofy with purple lace and weird patterns and was vanilla.

More people ate my half of the cake.
