Old School Iconic Chicago Steakhouse: Gibsons
New School: Bavettes or Swift & Sons

Not a huge steakhouse guy, but in general I prefer new school. I've read Gene & Georgetti is treading on its reputation.

New School: Bavettes or Swift & Sons

Not a huge steakhouse guy, but in general I prefer new school. I've read Gene & Georgetti is treading on its reputation.

What is the difference between old school and new school steakhouses?

Generally, "alternative dishes" like seafood, sides and the cocktail program are more interesting/varied with modern steakhouses. Additionally, with modern steakhouses the presentation tends to be a bit better. New school is going to feel younger with the staff and clientele. Old school tends to have better service, I think.

It's not a night and day difference. If you want steak either type is going to work.

The menu at a new school steakhouse is going to be littered with terms like organic, locally sourced, sous vide, artisan and whatever the hottest thing is currently.

The menu at an old school steak house will be littered with the word steak and none of the previously mentioned buzz words. Also, your waiter will be wearing a white shirt, black bow tie and probably has a story about serving every celebrity and athlete you've ever heard of in the 70s.

The side dishes at the old school steak house will be a $10baked potato and boiled broccoli. The sides at the new school steak house will taste good.
The fish at the the old school steak house will be stuffed Dover sole they bought premade from Sysco. Blah blah
