wtf do I do with it lol...never have smoked anything in my life. reading this thread makes me think I'm gonna [expletive] this up really good.

like add liquid to make sure it doesn't dry out...how do I do that? there's grates...do I need to put meat in an aluminum pan first to add liquid like apple juice?

I dunno much of anything about those things, other than I like eating the stuff that comes out of them.

But don't worry about screwing it up. Start with something easy like pork butt. Enjoy the process. Beers or bourbon. Excuse to sneak off outside for a while and act important.

I think I will smoke park steaks - will cut/fork them apart for sandwiches and tacos. My wife claims to not like park steaks (I think the cheap price scares her) but what she doesn't know won't hurt her. (I think my meat for 15 for Xmas smoking was like $15 total.

What is everyone else doing?

And more grilling than smoking, but i really like park steaks grilled in maulls from nearly the start. Reapply. Sear that sauce in there, almost to a crisp.

Street corn sounds great too.

I am hoping to do a brisket. Might also throw a pork butt on too, because I always feel like I need 2 meats. Brisket overnight. Butt the next day. Dinner that night will be amazing.

Dang baby. That’s a lot of work. And a lot of food.

We’re cooking some salmon which is all ou know for sure. Undoubtedly we will cook more than that.

I'm smoking pork steaks and chicken this weekend. Tonight I'm cooking pork burgers and cube steaks for sandwiches.

Next weekend, I'll be smoking 4 pork butts.

Just looked it up on and apparently they are. What temp do you all cook pork steaks at? I remember as a kid my dad would blast them with heat on the grill and lather them in bbq sauce mixed with beer and they didn't turn out bad. I'd think smoking something that thin would be pretty smoky (not a bad thing, per se).

I usually smoke pork steaks low and slow around 220 until they look "right" and then finish them on direct heat and caramelize bbq sauce on them.

Yeah, they are done really quick. The way your dad did them was same as mine.

Temp, I don't know.
