I love introducing all my poor, deprived East coast pals out here to the gastronomic nirvana that is The St. Louis-style pork steak....

When I was back in town over the holidays, I stocked up heavily on the Maull's Sweet-n-Smoky sauce, and I love the look on my butcher's face when I request that the bone-in pork butt he just sold me be sliced into inch-thick steaks.

If he only knew.

Here's the end product. 2 hrs smoking. 1 hr wrapped. 45 min steaming. All at 200-225. It hit 175 while resting about 15 min after steaming. Still super moist. And the taste was good. Not a bad way to get startes but not really that difficult to handle. Overall, C+.

Overlooking the snowy and icy Illinois River eating some ribs. Pretty [expletive] good Sunday. Can you believe my lady friend has never had ribs?

I used to go there often when I lived behind the Chuck-A-Burger years ago. I was definitely a fan and would recommend them. Now that I'm in South City, I just never make the trip up there anymore.

No sadly she's in her 30s. 30 years without ribs. What the hell? I got her hooked now.

I was reading another forum and a guy said he bought brisket at Sam's for $90...that didn't make any sense b/c brisket is $2 something per pound at Sam's. If he bought $90 of brisket he bought close to 40 pounds. I suspected he actually bought a tenderloin. If you are putting tenderloin in the smoker you are ruining that meat.

Weekends here. Whose BBQing this weekend? I got a brisket ready to go for tomorrow.
