Also this.

I've spent a decade of time and money on cocktails and spirits, but would rather not even talk about it here.

If you wanna say [expletive] off and be a [expletive] baby, which I don't assume you do, then we can't have that convo. But I bet based on your history we could have an intelligent discussion.

Hey, I got an idea. Let's talk more about bourbon. I'm all ears if you guys want to throw out more recommendations. Buffalo Trace is going to be my next purchase.

Have you all ever watched Deadwood and notice how many shots of whiskey they take? I mean...it's ridiculous, right?

Maybe the water wasn't safe to drink.

Al Swearingen's tolerance was probably off the charts. It had to have taken him a few good full years of very hard drinking to get to the point that he could drink a bottle of what was probably in those days like 120+ proof whiskey and remain upright.

Very newbie question - some whiskey is 80 proof, others 90-ish. What is the range, and what causes it to vary? I would assume in general that higher proof would sell for more?

As booze ages in the barrel it loses proof as alcohol evaporates. Many spirits are also later diluted with water to get them to the distiller's desired proof. It goes into the barrel WAY higher than it comes to you in the bottle.

As a general rule of thumb, higher-proof spirits are best for cocktails, the proofing holds up to vermouth, amaro, triple sec, citrus juice, syrups and other mixers/modifiers. If you drink a barrel-strength whiskey at like 120 proof, the first sip will explode your mouth, you won't taste anything. The second, you'll start getting some flavor. The third and on will get progressively better.

If you find yourself in Chicago go take the CH Distillery tour, or, heck, hit any distillery for a tour. They'll usually pass around a small glass of what is essentially moonshine, the pure distillation that comes out of the still before it is aged/cut down. You can smell it, and it's tough stuff. You can also taste it if you want.

I will do that, I wasn't aware there was a distillery in the area. You say higher proofs are better for mixing - what would you say in general (I realize there is probably a ton of exceptions) is the highest you would drink straight. I know Buffalo Trace is 90, Larceny is 92, and those are two that I like.

Also, what does ice and water do to the drink - and if I were to put a "splash" of water in my bourbon, how much exactly is a "splash"?
