Dunno if I ever put this in here but smoking salmon about 225 with cherry wood, basting it with melted butter pressed garlic and a soy sauce combo, then eating it on crackers with an onion chive cream cheese is very close to heaven on Earth.

I have a Codlo that I got off Kickstarter a few years ago. I also Kickstarted the Searzall to perfect seared edges when I cook steaks sous vide.

What are your favorite things to do with whole chickens? I just got 50 back from the processor and realized I've really never done anything with a whole yard bird.

Chicken's kind of boring but also a blank canvass.
The other day I was looking for something quick and cheap and went to Kroger. Wanted to do half chickens which they didn't have, so I just got a 3 legs/thighs for $3 and some sweet potatoes.
Put a sweet bbq rub on them with some salt and pepper and smoked with a block of sweet wood (cherry or pecan) and some mesquite chips at 250-300ish (with the temp decreasing, higher up front temp helps crisp the skin) for 1.5-2 hours (pulled when the thickest part of the thigh hit 172) . Put the sweet potatoes on at the same time and cooked them 2 hours and wrapped them in foil for the 2nd hour. Served with pulled chicken on top of the sweet potato with bbq sauce and some carmelized (or not) white onion.
Turned out really well. You could do this same approach if you cut the chicken in halves and laid them flat. Here's a picture of the leftovers.

You could also do a beer can chicken if you have that stand, though, I've never liked this as the chicken is *too* moist.
