this isn't a very interesting cover, other than it's old Uncle Tupelo.
Youtube also has an interview and some songs (program called critical mass) with very young and very wasted Uncle Tupelo.

I don't know if this qualifies as interesting.
But it turns out that Billy Joel's daughter Alexa, who looks distressingly like him instead of Christie Brinkley, is a singer and did a cover of "Just the Way You Are".
