That pic you posted of the flat pan? Go have a quick look. They're cooking every classic breakfast dish on there except eggs. Because it's not made for that. Maybe you saw a dude in a breakfast diner bust out omelettes on a flat-top, but unless you wanna make like 80 of them a day for months, and throw away a lot of eggs while you learn, to get your technique down to the point that it's actually relevant for home cooking you're better off just using the right pan.jim wrote:I feel like a broken record here, but how many omelettes can you make simultaneously with a 8-9 pan?

No, but I've tried sous vin, where I drink a bunch of wine while cooking and finish the meal under the table.
